Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1/2 cup ground almonds (or almond flour)
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened (or coconut oil for vegan version)
  • 1/3 cup honey (or maple syrup/agave nectar as substitute)
  • 1 large egg (or flaxseed/chia egg for vegan)
  • 1 tsp vanilla extract

Add-ins

  • 1/2 cup chopped almonds, lightly toasted

Instructions

  1. Prepare your ingredients: Preheat your oven to 350°F (175°C). Gather and measure all ingredients. Chop almonds if necessary and sift the flour for a lighter dough texture.
  2. Cream butter and honey: In a large bowl, beat softened butter and honey together until smooth and creamy to create a rich, moist cookie base.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, ground almonds, baking powder, and salt to ensure even distribution.
  4. Mix wet and dry ingredients: Slowly add the dry ingredient mixture into the butter and honey mixture, stirring gently. Beat in the egg and vanilla extract until a slightly sticky, pliable dough forms.
  5. Add chopped almonds: Fold in the toasted chopped almonds evenly for crunchy texture bursts throughout the cookies.
  6. Shape and bake: Spoon or roll the dough into small balls and place them on a parchment-lined baking sheet. Flatten each ball slightly with your palm to ensure even baking. Bake for 12-15 minutes or until edges are golden brown.
  7. Cool and enjoy: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely and firm up for the perfect texture.

Notes

  • Use room temperature butter for better blending with honey and smoother batter.
  • Mix dough just until combined; overmixing can make cookies tough.
  • Lightly toast the almonds to enhance their flavor and crunch.
  • If dough is too sticky to handle, chill in the refrigerator for 20 minutes before shaping.
  • Remove cookies from oven as soon as edges turn golden to maintain chewy centers.
