Instructions

  1. Prepare the Ingredients: Finely chop the onion and garlic, wash and chop the fresh herbs, and season the chicken pieces with salt and pepper to ensure maximum flavor in every bite.
  2. Brown the Chicken: Heat olive oil in a large skillet over medium heat. Brown the chicken on both sides until golden but not fully cooked, locking in moisture and flavor. Then, remove the chicken from the skillet.
  3. Sauté Aromatics: Add the chopped onions and garlic to the same skillet. Sauté until soft and fragrant, scraping up the browned bits left from the chicken to enhance the flavor.
  4. Add Rice and Broth: Stir the rice into the skillet, allowing it to lightly toast with the aromatics. Pour in the chicken broth and add the fresh herbs, combining gently.
  5. Simmer Together: Nestle the partially cooked chicken back into the skillet. Cover with a lid, reduce the heat to low, and let simmer for about 20 minutes, or until the rice is tender and the chicken is cooked through.
  6. Final Touches: Once cooked, fluff the rice gently with a fork. Sprinkle extra fresh herbs and, if desired, add a little lemon zest or juice to brighten the flavors before serving.
