Instructions

  1. Prepare the Beef and Bean Filling: Sauté diced onion and minced garlic in a skillet over medium heat until fragrant and translucent.   2. Warm the Tortillas: Lightly warm tortillas to make them soft and pliable, preventing cracks while rolling and helping them absorb flavors.
  3. Assemble the Enchiladas: Lay out a tortilla and spoon a generous amount of beef and bean mixture down the center. Sprinkle with shredded cheese, roll tightly, and place seam-side down in a greased baking dish, lining them up snugly.
  4. Add Sauce and Cheese: Pour enchilada sauce evenly over the rolled tortillas to cover them fully. Top with the remaining shredded cheese to create a golden crust.
