Ingredients

Scale

Main Ingredients

  • 1 block (around 200g) or 1 cup crumbled feta cheese
  • 2 cups cherry tomatoes, halved
  • 3 cups fresh spinach
  • 4 large eggs

Seasonings and Extras

  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, plus extra for drizzling
  • Salt, to taste
  • Black pepper, freshly cracked, to taste
  • Fresh herbs (basil or oregano), optional for garnish

Instructions

  1. Prepare the Tomatoes and Spinach: Preheat your oven to 375°F (190°C). Slice the cherry tomatoes in half and toss them with olive oil, minced garlic, salt, and pepper in a baking dish. Add fresh spinach around the tomatoes and drizzle a bit more olive oil over the greens.
  2. Add the Feta Cheese: Place a block or spread crumbled feta cheese evenly throughout the dish. The feta will melt slightly while baking, adding creamy richness and a tangy punch.
  3. Crack the Eggs: Make small wells in the spinach and tomato mixture and carefully crack the eggs into each well. Season the eggs with a pinch of salt and freshly cracked black pepper.
  4. Bake Until Set: Transfer the baking dish to the preheated oven and bake for 12 to 15 minutes until the egg whites are set but yolks remain slightly runny. Bake longer if you prefer firmer yolks.
  5. Garnish and Serve: Remove from oven and let cool for a minute. Sprinkle with fresh herbs such as basil or oregano, drizzle with extra olive oil if desired, and serve immediately for a comforting, fresh breakfast.

Notes

  • Use fresh, ripe cherry tomatoes and fresh spinach for the best flavor and texture.
  • Let eggs come to room temperature before baking for even cooking.
  • Season tomatoes, spinach, and eggs individually to ensure balanced flavor.
  • Use a lightly greased or ceramic baking dish for easy cleanup and to prevent sticking.
  • Check eggs around 12 minutes to keep yolks creamy and avoid overcooking.
