Instructions

  1. Preheat and prepare the baking dish: Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil to prevent sticking and prepare it for layering your ingredients.
  2. Arrange the base: Spread fresh baby spinach evenly across the bottom of the dish. Scatter halved cherry tomatoes evenly over the spinach for balanced roasting.
  3. Add seasonings and feta: Drizzle olive oil over the vegetables, then add minced garlic, salt, pepper, and your choice of herbs like thyme or oregano. Nestle chunks or a block of feta cheese on top, allowing it to soften and infuse the dish with tanginess.
  4. Bake before adding eggs: Place the dish in the oven and bake for about 15 minutes, letting the tomatoes soften and release juices, the spinach wilt, and the feta start to melt and brown slightly.
  5. Add eggs and finish baking: Carefully crack eggs onto the partially cooked vegetables, spacing them evenly. Return the dish to the oven for an additional 8–12 minutes, or until the egg whites are set but yolks remain runny or cooked to your preference.
