Beef Bulgogi

Beef Bulgogi is a classic Korean dish featuring thinly sliced ribeye or sirloin marinated in a savory and sweet blend of soy sauce, garlic, sesame oil, sugar, and other fresh ingredients. Quick to prepare and cook, this flavorful dish delivers tender, juicy beef with a perfect umami balance. Perfect for weeknight dinners, it can be served with rice, lettuce wraps, or noodles, and easily adapted for dietary preferences.

Ingredients

Scale

Main Ingredients

  • 1 lb thinly sliced beef (ribeye or sirloin recommended)
  • 3 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 to 2 tablespoons sugar or honey (or maple syrup/agave nectar as sweet swap)
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 1/2 grated Asian pear or apple (optional, for tenderizing)
  • Pinch of black pepper

For Garnish

  • 1 teaspoon toasted sesame seeds
  • Additional chopped green onions

Optional Variations

  • 1 teaspoon gochujang or red pepper flakes for spicy kick
  • Substitute beef with thinly sliced mushrooms or tofu for vegetarian style
  • Fresh cilantro or mint for herb infusion

Instructions

  1. Prepare the Marinade: In a bowl, combine soy sauce, sugar or honey, minced garlic, sesame oil, grated Asian pear (if using), chopped green onions, and black pepper. Stir well until the sugar dissolves and ingredients are thoroughly blended.
  2. Marinate the Beef: Add the thinly sliced beef into the marinade, ensuring each piece is fully coated. Cover the bowl and refrigerate for at least 20 minutes, up to 2 hours for deeper flavor.
  3. Heat the Pan: Preheat a large skillet or grill pan over medium-high heat. Lightly oil the surface to prevent sticking and to get a good sear on the meat.
  4. Cook the Beef: Place the marinated beef slices in a single layer on the hot pan. Cook for 2-3 minutes on each side, letting the meat caramelize and cook through. Avoid overcrowding to maintain a perfect sear.
  5. Garnish and Serve: Transfer the cooked beef to a serving plate and sprinkle with toasted sesame seeds and chopped green onions. Serve hot alongside steamed rice or lettuce wraps.

Notes

  • Choose ribeye or sirloin cuts for optimal tenderness and flavor.
  • Slice beef against the grain to keep it tender.
  • Do not marinate for more than 2 hours to avoid mushy texture.
  • Use high heat for quick caramelization and to lock juices.
  • Allow beef to rest a few minutes after cooking to redistribute juices.
  • Use fresh garlic, green onions, and quality sesame oil for authentic flavor.
