Beef Filling

  • 1 lb lean ground beef

  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper, to taste

Tortillas and Assembly

  • 810 soft corn or flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 2 cups enchilada sauce (canned or homemade)

Instructions

  1. Prepare the Beef Filling: Heat olive oil in a skillet over medium heat. Add diced onions and minced garlic, cooking until soft and fragrant. Add lean ground beef, breaking it apart, and cook until browned and no longer pink. Stir in chili powder, cumin, paprika, salt, and pepper. Remove from heat and set aside.
  2. Warm the Tortillas: Warm your tortillas in a dry skillet or microwave to make them more pliable for rolling, which helps prevent cracking when you assemble the enchiladas.
  3. Assemble the Enchiladas: Spoon a generous amount of the beef mixture onto each tortilla, then sprinkle with shredded cheese. Roll each tortilla tightly and place seam-side down in a baking dish prepped with a little enchilada sauce to prevent sticking.
  4. Top with Sauce and Cheese: Pour the enchilada sauce evenly over the rolled tortillas, making sure each one is well coated. Finish with a generous layer of shredded cheese on top for that perfect melt and golden crust.
  5. Bake Until Bubbly: Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes, or until the cheese is melted, bubbly, and slightly browned. Let cool for a few minutes before serving.

  • Drain excess grease from the browned beef to prevent an oily filling.
