Instructions

  1. Prepare the Ingredients: Slice the beef thinly against the grain for tenderness. Dice the carrots, bell peppers, and chop green onions uniformly for even cooking. Mince the garlic and ginger. Beat the eggs lightly. Ensure your day-old rice is cold and separated to avoid clumping during frying.
  2. Cook the Beef: Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Quickly stir-fry the beef strips until just browned but still tender, about 2-3 minutes. Remove from the pan and set aside to keep the meat juicy and prevent overcooking.
  3. Scramble the Eggs: Add a little more oil if needed, then pour in the beaten eggs. Stir gently until fluffy and just cooked through, about 1-2 minutes. Remove and set aside with the beef.
  4. Sauté Aromatics and Vegetables: In the same pan, add garlic and ginger and cook until fragrant, about 30 seconds. Add diced carrots, peas, and bell peppers. Stir frequently for 3-4 minutes to soften the vegetables while keeping them crisp.
  5. Add Rice and Sauce: Add the cold rice to the pan, breaking up any clumps. Drizzle soy sauce evenly over the rice and vegetables. Stir well to coat everything evenly and allow the sauce to slightly caramelize, enhancing the flavor, about 3-4 minutes.
  6. Combine Everything: Return the cooked beef and scrambled eggs to the pan. Toss gently but thoroughly to evenly heat the mixture and meld the flavors together, about 2 minutes.
