Ingredients

Scale

Noodles

  • Fresh lo mein noodles (soft and chewy, quantity as needed for 4 servings)

Beef

  • Beef sirloin or flank steak, thinly sliced – approximately 12 oz (340g)
  • 2 tbsp soy sauce (for marinade)
  • 1 tsp sesame oil (for marinade)
  • 1 tsp cornstarch (for marinade)

Vegetables

  • 1 bell pepper, thinly sliced
  • 1 cup snap peas, trimmed
  • 1 carrot, julienned
  • 34 green onions, chopped (plus extra for garnish)

Sauce

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp water or broth

Other Ingredients

  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil (for finishing)
  • 1 tbsp toasted sesame seeds (for garnish)
  • Optional: chili flakes or chili garlic sauce to taste

Instructions

  1. Prepare the Ingredients: Slice the beef thinly against the grain for tenderness. Chop vegetables into bite-sized pieces. Mince garlic and ginger. Loosen fresh lo mein noodles by soaking them briefly in warm water if refrigerated.
  2. Marinade the Beef: Toss the sliced beef in soy sauce, sesame oil, and cornstarch. This seasons the meat and helps achieve a velvety texture when cooked.
  3. Cook the Beef: Heat vegetable oil in a wok or large skillet over high heat. Quickly sear the beef strips in batches until browned but not fully cooked. Remove and set aside to prevent overcooking.
  4. Stir-Fry the Vegetables: Add more oil if needed. Stir-fry garlic, ginger, and harder vegetables like carrots and snap peas first. Add softer vegetables like bell peppers last to keep them crisp and vibrant.
  5. Combine Noodles and Sauce: Return the cooked beef to the pan along with fresh noodles. Pour in the sauce mixture of soy sauce, oyster sauce, and water or broth. Toss gently to evenly coat and heat through.
  6. Finish and Garnish: Remove from heat and drizzle with sesame oil. Garnish with chopped green onions and toasted sesame seeds for added aroma and crunch. Add optional chili flakes or sauce if desired.

Notes

  • Use high heat to keep vegetables crisp and beef tender.
  • Don’t overcook fresh noodles; a quick warm-up is enough to maintain their springiness.
  • Slice beef thinly to ensure fast cooking and tender bites.
  • Have all ingredients prepped and sauces mixed before stir-frying for smooth workflow.
  • Adjust soy and oyster sauce amounts to suit personal taste preferences.
  • To make gluten-free, substitute soy sauce with tamari or coconut aminos and use gluten-free oyster sauce alternatives.
  • For vegetarian options, replace beef with tofu or tempeh and use vegetarian sauces.
