Ingredients

Scale

Beef and Marinade

  • 300g flank steak or sirloin, sliced thinly against the grain
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil

Vegetables

  • 1/2 cup broccoli florets
  • 1/2 red bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 1 medium carrot, thinly sliced
  • 1 small onion, sliced

Aromatics and Sauce

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon oyster sauce
  • 2 tablespoons vegetable oil, divided
  • 2 tablespoons water (for sauce)

Instructions

  1. Prepare the Ingredients: Slice the beef thinly against the grain to ensure tenderness. Wash and chop the broccoli, bell peppers, carrots, and onion into bite-sized pieces for even cooking. Mince the garlic and ginger to release their fresh aromas.
  2. Marinate the Beef: In a bowl, toss the sliced beef with soy sauce, cornstarch, and sesame oil. This mixture helps tenderize the meat and creates a smooth coating, locking in flavor during cooking.
  3. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat. Add the beef in a single layer and sear it until browned but not fully cooked, about 1 to 2 minutes. Remove the beef from the pan and set aside to avoid overcooking.
  4. Stir-Fry the Vegetables: Add the remaining vegetable oil if needed, then cook the minced garlic and ginger until fragrant, about 30 seconds. Toss in the sliced onions, carrots, bell peppers, and broccoli, stir-frying until the vegetables are crisp-tender and vibrant, approximately 3 to 4 minutes.
  5. Combine and Finish: Return the beef to the pan and pour in the oyster sauce mixed with a splash of water. Stir everything together and cook for another 1 to 2 minutes until the beef is fully cooked and the sauce thickens, coating all ingredients evenly.

Notes

  • Use high heat to achieve a perfect sear on the beef and keep vegetables crisp.
  • Do not overcrowd the pan; cook in batches if necessary to prevent steaming.
  • Prep all ingredients before cooking to ensure a smooth and fast stir-fry process.
  • Slice beef thinly for quick cooking and tenderness.
  • Add sauce gradually to control seasoning and avoid over-salting.
