Ingredients

Scale

Main Ingredients

  • 1 lb lean ground beef
  • 2 tbsp taco seasoning (blend of chili powder, cumin, paprika, garlic powder, oregano)
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado or 1/2 cup guacamole
  • 1/4 cup sour cream or Greek yogurt
  • Fresh cilantro leaves, a handful
  • 1 lime, juiced

Optional Ingredients

  • 1/2 cup crushed tortilla chips
  • Roasted corn or diced bell peppers
  • Jalapeños, pickled onions, or sliced radishes for topping
  • Substitute greens: kale or mixed greens

Instructions

  1. Brown the Ground Beef: Heat a skillet over medium-high heat, add the lean ground beef, and cook until fully browned and no longer pink, breaking it up into small pieces as it cooks.
  2. Add Taco Seasoning: Drain excess grease, sprinkle taco seasoning over the beef, stir in a splash of water, and simmer until the mixture thickens and the spices are well absorbed.
  3. Prepare the Salad Base: While the beef cooks, chop romaine lettuce, halve cherry tomatoes, rinse and drain black beans, and shred the cheese.
  4. Assemble the Bowls: Layer chopped romaine in bowls, top evenly with seasoned beef, black beans, tomatoes, shredded cheese, and dollops of avocado or guacamole.
  5. Add Finishing Touches: Garnish with fresh cilantro, a squeeze of lime juice, and dollops of sour cream or Greek yogurt. Sprinkle optional crushed tortilla chips for extra crunch.

Notes

  • Use lean beef to reduce grease without sacrificing flavor.
  • Toast taco seasoning briefly before adding to beef to enhance aroma.
  • Prep veggies ahead of time to save assembly time.
  • Slightly warm serving bowls to keep the salad ingredients pleasant while eating.
  • Fresh lime juice brightens and balances the rich and spicy flavors.
