Ingredients

Scale

Vegetables

  • 3 cups fresh bok choy, washed and cut into bite-size pieces
  • 2 cups button or cremini mushrooms, sliced thinly
  • 2 garlic cloves, minced
  • 2 green onions, thinly sliced (for garnish)

Oils & Sauces

  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce (or tamari/coconut aminos for gluten-free)

Optional

  • 1/4 tsp chili flakes (optional, for heat)

Instructions

  1. Prepare Your Ingredients: Wash the bok choy thoroughly and cut it into bite-size pieces. Clean and slice the mushrooms thinly for even cooking. Mince the garlic finely and slice the green onions to use as garnish later.
  2. Heat the Oil and Sauté Garlic: In a large skillet or wok, warm the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned to release its aroma.
  3. Cook the Mushrooms: Add the sliced mushrooms to the pan and sauté until they soften and start to brown lightly, about 4-5 minutes. This builds the earthy base flavor of the dish.
  4. Add Bok Choy and Flavorings: Toss in the bok choy and stir constantly. Pour in the soy sauce and drizzle sesame oil over the vegetables. If desired, sprinkle chili flakes at this stage. Cook for 3-4 minutes until the bok choy wilts but remains slightly crunchy.
  5. Final Touch and Serve: Remove the stir-fry from heat and garnish with the sliced green onions. Give it one last gentle toss and serve hot with your choice of side.

Notes

  • Prep all ingredients before cooking as stir-frying is a quick process.
  • Cook mushrooms in batches if your pan is crowded to avoid steaming.
  • Use high heat for a perfect stir-fry texture that sears ingredients quickly while keeping crunch.
  • Add soy sauce gradually to control saltiness and avoid overpowering the dish.
  • Try adding toasted sesame oil at the end for aroma, but avoid overheating it to prevent bitterness.
  • Substitute tofu, shrimp, or chicken for added protein if desired.
  • Use tamari or coconut aminos instead of soy sauce for a gluten-free version.
  • Optional garnishes include toasted sesame seeds or fresh cilantro for extra flavor and color.
