Ingredients

Scale

Pork Chops and Coating

  • 4 pork chops, bone-in or boneless, about ¾ inch thick
  • ½ cup all-purpose flour (or almond flour for gluten-free)
  • 2 large eggs, beaten
  • 1 cup breadcrumbs or panko (or gluten-free breadcrumbs)

Seasonings

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Optional: 1 teaspoon mixed dried herbs (rosemary, thyme, parsley)

For Frying

  • ¼ cup vegetable oil or butter-oil blend

Instructions

  1. Prepare the Pork Chops: Pat the pork chops dry with paper towels to ensure the breading sticks well and results in a crispy crust.
  2. Set Up Your Breading Station: Arrange three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with the breadcrumb mixture including paprika, garlic powder, and optional herbs.
  3. Coat the Pork Chops: Dredge each pork chop first in the flour, shaking off excess, then dip into the beaten eggs allowing extra to drip off, and finally press into the breadcrumb mixture to coat evenly.
  4. Fry to Golden Perfection: Heat oil or butter-oil blend over medium heat in a skillet. Fry the breaded pork chops for 4-5 minutes per side until golden brown and an internal temperature of 145°F (63°C) is reached.
  5. Rest Before Serving: Let the pork chops rest for a few minutes after cooking to allow juices to redistribute, keeping the meat juicy and tender.

Notes

  • Use a meat mallet to gently pound pork chops to even thickness for uniform cooking.
  • Do not overcrowd the pan; fry in batches if necessary to maintain crispiness.
  • Maintain medium heat to avoid burning the breading while cooking through.
  • Let the cooked pork chops rest to retain moisture.
  • Panko breadcrumbs provide a lighter, airier crust with extra crunch.
