Instructions

  1. Prepare the Vegetables: Wash and chop the zucchini into bite-sized pieces. Dice the onions, mince the garlic, and chop the tomatoes. Set the corn kernels aside if using fresh ears, or measure frozen corn.
  2. Sauté Aromatics: Heat butter or olive oil in a large skillet over medium heat. Add diced onions and minced garlic, cooking until the onions become translucent and fragrant, about 3-4 minutes.
  3. Cook the Vegetables: Add the zucchini and corn kernels to the skillet. Stir frequently and cook for about 5-7 minutes until the zucchini is tender but still slightly crisp. Then add the chopped tomatoes and cook for another 2-3 minutes, allowing the tomatoes to soften.
  4. Season and Add Cheese: Season with salt and pepper to taste. Sprinkle the queso fresco or shredded cheese over the warm vegetables, stirring gently until the cheese melts into a creamy texture. Finish with chopped cilantro for freshness.
  5. Serve Warm: Remove from heat and serve immediately for the best flavor and texture.
