Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups all-purpose flour (or gluten-free flour blend for GF version)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened (or coconut oil for vegan)
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg (or 1 flax egg for vegan)
  • 1 teaspoon vanilla extract

Add-ins

  • 1/2 cup caramel chunks or caramel sauce
  • 1/3 cup chocolate chips (optional)
  • 1/3 cup chopped nuts like pecans or walnuts (optional)

Instructions

  1. Prepare the Dough: Cream the softened unsalted butter with the brown sugar and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well for richness and flavor. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined to preserve dough tenderness.
  2. Incorporate the Caramel: Gently fold in caramel chunks or swirl in caramel sauce to distribute gooey pockets evenly throughout the dough. At this stage, add optional chocolate chips or chopped nuts for extra texture and flavor.
  3. Transfer to Skillet: Generously grease a 10-inch cast iron skillet or oven-safe pan. Spread the cookie dough evenly in the skillet and press lightly to ensure uniform thickness across the pan.
  4. Bake: Bake the skillet cookie in a preheated oven at 350°F (175°C) for 20 to 25 minutes. Bake until the edges are golden brown while the center remains soft and gooey. Be careful not to overbake to maintain the perfect gooey texture.
  5. Cool and Serve: Allow the cookie to cool slightly in the pan to firm up while staying warm and melty inside. Serve directly from the skillet with a scoop of vanilla ice cream or a drizzle of extra caramel sauce for indulgence.

Notes

  • Use room temperature ingredients to ensure even mixing and smooth dough texture.
  • Pull the cookie from the oven as soon as the edges are golden and the center looks set but soft for optimal gooeyness.
  • Nestle caramel chunks throughout the dough rather than just mixing in for melty caramel pockets in every bite.
  • Use a 10-inch cast iron skillet for best thickness and even baking.
  • Line skillet with parchment paper for easier cleanup and serving if preferred.
