Ingredients

Scale

Cheese Tortellini

  • Fresh or frozen cheese tortellini (ricotta or mozzarella filled), about 12 oz

Summer Vegetables

  • 1 medium zucchini, washed and chopped into bite-sized pieces
  • 1 bell pepper, any color, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced

Other Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Vegetables: Wash and chop the zucchini, bell peppers, and cherry tomatoes into bite-sized pieces. Mince the garlic so it’s ready to infuse your oil with flavor.
  2. Cook the Cheese Tortellini: Bring a large pot of salted water to a boil and cook the tortellini according to package instructions, usually about 3 to 5 minutes until tender but not mushy. Drain and set aside.
  3. Sauté the Summer Veggies: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant. Toss in zucchini and bell peppers and sauté for 5 to 6 minutes until softened but still vibrant.
  4. Combine Tortellini and Veggies: Add the cooked tortellini to the skillet with the sautéed veggies, then stir in the cherry tomatoes and cook for another 2 minutes to warm through and slightly soften the tomatoes.
  5. Finish with Fresh Herbs and Cheese: Remove from heat, toss in fresh basil leaves, and sprinkle generously with grated Parmesan cheese. Season with salt and pepper to taste, then give it a final gentle toss before serving.

Notes

  • Use fresh, high-quality tortellini for best texture and flavor.
  • Don’t overcook your veggies; keep them crisp-tender to retain freshness and color.
  • Reserve some pasta water and add a splash to the pan if dish feels dry.
  • Be generous with herbs like basil and Parmesan to brighten and elevate the dish.
  • Serve immediately for best taste and texture.
