Ingredients

Scale

Vegetables

  • 2 cups broccoli florets (fresh or frozen)

Base

  • 1 cup long-grain white or brown rice

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk or cream
  • 1 1/2 cups sharp cheddar cheese, shredded (preferably freshly grated)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare Broccoli and Rice: Cook the rice according to package instructions until fluffy and fully cooked. While the rice cooks, steam the broccoli florets for 4-5 minutes until tender but still bright green.
  2. Make the Cheese Sauce: In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute to form a roux. Gradually add the milk while whisking constantly to prevent lumps. Continue stirring until the sauce thickens, then reduce heat and stir in the shredded cheddar cheese until smooth and creamy.
  3. Combine Everything Together: Gently fold the steamed broccoli and cooked rice into the cheese sauce, stirring carefully to coat evenly without mashing the broccoli.
  4. Final Seasoning and Serve: Season the mixture with salt, black pepper, garlic powder, and onion powder to taste. Mix gently one last time, then serve warm directly from the pan or transfer to a baking dish for optional broiling until bubbly and golden.

Notes

  • Use freshly grated cheese for a smoother melt and better flavor.
  • Do not overcook broccoli; keep it crisp-tender for best texture.
  • Day-old rice can improve texture and prevent mushiness.
  • Melt cheese sauce over low heat to avoid graininess.
  • Try adding nutmeg or smoked paprika for extra subtle flavor layers.
