Instructions

  1. Prepare the Meat Mixture: In a large bowl, combine the lean ground beef, bread crumbs, beaten eggs, finely chopped onion, minced garlic, salt, and pepper. Mix gently just until evenly combined, being careful not to overwork the meat to keep the meatloaf tender.
  2. Add the Cheese Filling: Divide the meat mixture in half. Shape the first half into a loaf on a baking sheet or in a loaf pan. Layer slices or shredded cheese over the formed meat, then cover with the second half of the meat mixture, pressing edges to seal and enclose the cheese completely inside.
  3. Bake the Meatloaf: Brush the top of the meatloaf with ketchup or tomato sauce for a flavorful glaze. Bake in a preheated oven at 350°F (175°C) for 60 to 70 minutes, or until the meatloaf is cooked through and juicy and the cheese is melted within.
  4. Prepare the Mashed Potatoes: While the meatloaf bakes, boil the peeled and quartered potatoes in salted water until fork-tender, about 15-20 minutes. Drain well and mash with butter, warm milk or buttermilk, cream if using, salt, and pepper. Adjust the creaminess by adding more milk or butter as needed, until smooth and velvety.
