Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs, cut into bite-sized pieces

Vegetables & Aromatics

  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Liquids & Dairy

  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half

Carbohydrates

  • 1 package (about 16 oz) potato gnocchi

Fats & Oils

  • 2 tablespoons butter or olive oil

Herbs & Seasonings

  • 2 teaspoons fresh thyme or rosemary
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare Your Ingredients: Dice carrots, celery, and onions finely for even cooking. Mince garlic and cut chicken into bite-sized pieces or strips for quick and thorough cooking.
  2. Sauté the Vegetables: Heat butter or olive oil in a large pot over medium heat. Add onions, carrots, and celery and cook until vegetables are soft and onions translucent, about 5-7 minutes. Add garlic last and stir for another minute to avoid burning.
  3. Cook the Chicken: Add the diced chicken to the pot, season lightly with salt and pepper, and cook until no longer pink on the outside, sealing in the juices and ensuring tenderness.
  4. Add Broth and Herbs: Pour in the chicken broth and add fresh thyme or rosemary. Bring to a gentle boil then reduce heat and simmer for about 10 minutes to allow flavors to meld.
  5. Introduce the Gnocchi: Add potato gnocchi directly into the simmering soup. Cook until gnocchi float to the surface, about 3-5 minutes.
  6. Stir in Cream and Finish: Lower the heat to low and stir in heavy cream or half-and-half. Warm gently without boiling, adjust seasoning with salt and pepper. Serve hot.

Notes

  • Use fresh herbs like thyme or rosemary for superior flavor.
  • Do not overcook gnocchi to prevent mushy texture; add them near the end.
  • Simmer gently after adding cream to avoid curdling and maintain creamy texture.
  • For extra texture, shred cooked chicken instead of dicing.
  • Enhance broth flavor by using homemade or high-quality chicken broth.
