Instructions

  1. Sauté the Aromatics: Melt butter or warm olive oil in a large pot over medium heat. Add diced onion, celery, and carrots, cooking until softened and fragrant, about 5-7 minutes. Stir in minced garlic during the last minute to avoid burning.
  2. Cook the Chicken: Place the chicken breasts or thighs into the pot, allowing them to sear lightly, or add them raw and cover with broth. Let the chicken cook through while the rice simmers.
  3. Add Wild Rice and Broth: Pour in the wild rice and chicken broth, bringing the mixture to a boil. Then reduce the heat to a simmer, covering the pot and letting the rice absorb flavors and cook tender, usually 45-60 minutes.
  4. Shred the Chicken: Once the chicken is cooked through, carefully remove it from the pot and shred with two forks. Return the shredded chicken to the soup for a uniform texture.
  5. Finish with Cream and Herbs: Stir in cream or milk if using, then season with salt, pepper, and fresh herbs like parsley and thyme. Taste and adjust seasonings as needed.
