Instructions

  1. Prepare and Season the Chicken: Pat chicken dry with paper towels to ensure a golden sear. Season generously with salt and pepper on both sides to enhance flavor.
  2. Sauté the Chicken: Heat olive oil and butter in a large skillet over medium-high heat until shimmering. Add chicken breasts or thighs and cook until golden brown on each side, about 4-5 minutes per side depending on thickness. Remove chicken and set aside; it will finish cooking in the sauce.
  3. Cook Aromatics and Mushrooms: In the same pan, add minced garlic and chopped shallots. Sauté for 1-2 minutes until fragrant and translucent. Add sliced mushrooms, stirring often until moisture releases and mushrooms become golden brown, about 5-7 minutes.
  4. Deglaze with Madeira Wine: Pour in Madeira wine to deglaze the pan, scraping up browned bits from the bottom. Simmer for 2-3 minutes until slightly reduced, concentrating the sauce’s flavor.
  5. Add Broth and Simmer: Stir in chicken broth and reduce heat to medium. Return chicken to the pan, spoon sauce over the top, and cover. Let simmer gently for 8-10 minutes so the chicken finishes cooking and absorbs the sauce flavors.
  6. Finish the Sauce: Remove chicken once internal temperature reaches 165°F (74°C). Let the sauce simmer uncovered to thicken slightly. Stir in fresh parsley and Parmesan if using. Pour sauce over chicken when serving.
