Instructions

  1. Cook the noodles: Boil egg noodles according to package instructions until just al dente. Drain and set aside to prevent overcooking during baking.
  2. Prepare the chicken: Cook chicken breasts or thighs in a skillet with melted butter until golden and fully cooked, then shred or dice into bite-sized pieces.
  3. Make the creamy sauce: In the same skillet, combine condensed cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Heat gently until smooth and fragrant.
  4. Combine all ingredients: In a large mixing bowl, toss the cooked noodles, shredded chicken, thawed frozen mixed vegetables, and creamy sauce until everything is evenly coated.
  5. Assemble casserole: Transfer the mixture into a greased casserole dish and sprinkle shredded cheddar cheese evenly over the top.
