Instructions

  1. Prep Your Ingredients: Chop the onion, garlic, carrots, and celery finely to ensure even cooking and best flavors. Cut the chicken into bite-sized pieces for quick cooking and easy serving.
  2. Sauté the Base: Heat olive oil or butter in a large pot over medium heat. Add the chopped onion, garlic, carrots, and celery, stirring frequently until softened and fragrant, about 5 to 7 minutes.
  3. Brown the Chicken: Add the chicken pieces to the pot and sauté until golden on all sides, locking in juices and adding rich depth to the stew.
  4. Add Peas and Spices: Stir in the peas, ground cumin, smoked paprika, salt, and black pepper. Mix thoroughly so the spices coat all ingredients evenly.
