Instructions

  1. Prepare Your Ingredients: Begin by shredding or dicing the cooked chicken and grating the cheddar and Monterey Jack cheese. If using veggies or spices, chop and measure them out beforehand to streamline the cooking process.
  2. Heat the Pan: Place a nonstick skillet over medium heat. Add a small amount of butter or oil to the pan to prevent sticking and help the tortilla toast evenly to a golden brown.
  3. Assemble the Quesadilla: Lay one flour tortilla flat in the hot skillet. Sprinkle an even layer of shredded cheese over one half of the tortilla. Next, distribute the cooked chicken evenly on top of the cheese. Add any optional veggies and spices as desired. Finish with another light layer of cheese to help bind the filling.
  4. Cook Until Crispy and Melty: Fold the tortilla over the filling and cook for 3 to 4 minutes on one side, pressing gently with a spatula. Carefully flip and cook the other side for another 3 to 4 minutes, until the cheese is fully melted and the tortilla is golden and crispy.
  5. Slice and Serve: Remove the quesadilla from the pan and let it rest for a minute or two to allow the filling to set. Slice into wedges and serve immediately with your choice of garnishes or side dishes.
