Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts or thighs, sliced into bite-size strips

Vegetables & Aromatics

  • 8 oz fresh cremini or white button mushrooms, cleaned and sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Liquids & Dairy

  • 1 cup chicken broth
  • 1 cup sour cream (or Greek yogurt as a substitute)
  • 1 teaspoon Dijon mustard

Fats & Thickeners

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon all-purpose flour or cornstarch (for gluten-free option)

Base

  • Egg noodles or rice, cooked according to package instructions

Garnish

  • Fresh parsley, chopped

Instructions

  1. Prep the Ingredients: Slice the chicken into bite-size strips. Clean and slice the mushrooms. Finely chop the onion and mince the garlic to prepare everything for cooking.
  2. Sauté the Chicken: Heat butter and olive oil in a large skillet over medium-high heat. Add the chicken pieces and sear until just cooked through and lightly golden, about 5 minutes. Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add more butter if needed. Sauté the onions until translucent. Add the mushrooms and garlic, cooking until the mushrooms release moisture and turn tender and golden brown.
  4. Build the Sauce: Sprinkle the flour evenly over the onion and mushrooms. Stir well and cook out the raw flour taste. Slowly pour in the chicken broth while stirring to create a smooth sauce base. Let the sauce simmer for a few minutes until it thickens.
  5. Finish with Sour Cream and Mustard: Lower the heat to prevent curdling. Stir in the sour cream and Dijon mustard until the sauce is silky and fully combined. Return the cooked chicken to the pan and warm gently through.
  6. Combine and Serve: Serve the chicken stroganoff over cooked egg noodles or rice. Garnish with chopped fresh parsley for color and freshness. Enjoy your comforting meal!

Notes

  • Do not overcook the chicken; sear just until it’s cooked through to keep it tender and juicy.
  • Use room temperature sour cream to help prevent the sauce from curdling when added to hot ingredients.
  • Cook mushrooms slowly to enhance their natural flavor and develop a rich, caramelized taste.
  • Deglaze the pan with broth to lift browned bits for deeper flavor.
  • Simmer the sauce gently after adding sour cream to keep it creamy and avoid splitting.
