Instructions

  1. Prepare Your Ingredients: Finely chop the carrots, celery, onion, and garlic. Dice the chicken into bite-sized pieces and wash fresh herbs you plan to use. Prepping beforehand ensures a smooth cooking process.
  2. Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion, carrots, celery, and garlic, cooking until the vegetables soften and the onion becomes translucent, releasing their aromas.
  3. Add Chicken and Broth: Add diced chicken pieces to the pot and lightly brown them to develop flavor. Pour in the chicken broth and bring the mixture to a gentle boil.
  4. Simmer with Vegetables: Add diced potatoes and green beans (or your choice of vegetables). Reduce heat to low and let the soup simmer until chicken is cooked through and vegetables are tender, about 20 to 30 minutes.
