Instructions

  1. Prepare the Ingredients: Slice the zucchinis into half-moons and finely chop the garlic. If using cherry tomatoes, halve them. Pat the chicken breasts dry and season both sides generously with salt, pepper, and dried oregano.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. When shimmering, add the chicken breasts and cook for about 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add a bit more olive oil if needed. Add garlic and zucchini, sautéing for about 4 minutes until zucchini begins to soften. Add cherry tomatoes and cook for an additional 2 minutes until they start to blister.
  4. Combine and Finish: Return the chicken to the skillet, nestling it among the veggies. Let everything heat together for 2-3 minutes to blend flavors. Taste and adjust seasoning with salt, pepper, or oregano as desired.
