Chimichurri Sauce

  • 1 teaspoon dried oregano
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Chimichurri Sauce: Finely chop the fresh parsley, garlic, and oregano. In a bowl, combine the chopped herbs and garlic with olive oil, red wine vinegar, red pepper flakes, salt, and black pepper. Mix thoroughly and set aside to allow flavors to meld while you prepare the chicken.
  2. Season the Chicken Thighs: Pat the chicken thighs dry with paper towels to help achieve crispy skin. Lightly season both sides with salt and freshly ground black pepper. Let them rest at room temperature for approximately 10 minutes.
  3. Cook the Chicken: Heat a skillet over medium-high heat and add a drizzle of olive oil. Place the chicken thighs skin-side down without moving them and cook for 6-8 minutes until the skin is golden brown and crispy. Flip the chicken and continue to cook the other side for an additional 6-8 minutes until the internal temperature reaches 165°F (74°C).
  4. Rest and Coat with Chimichurri: Remove the chicken from heat and let it rest for 5 minutes to retain juices. Spoon generous amounts of chimichurri sauce over each piece just before serving.
