Ingredients

Scale

Chicken

  • 2 cooked chicken breasts, shredded or thinly sliced

Vegetables

  • 2 cups green cabbage, thinly sliced
  • 1 red bell pepper, julienned
  • 1 cup carrots, grated or julienned
  • 3 green onions, chopped
  • 1/4 cup fresh cilantro, chopped

Nuts & Seeds

  • 1/4 cup slivered almonds (or chow mein noodles)
  • 1 tablespoon toasted sesame seeds

Dressing

  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger

Instructions

  1. Prepare the Chicken: Cook chicken breasts by poaching, grilling, or roasting with simple seasoning until juicy and tender. Allow to cool, then shred or slice thinly.
  2. Chop and Prepare Vegetables: Thinly slice green cabbage, julienne red bell pepper, grate carrots, and chop green onions and cilantro to create a colorful, fresh vegetable base.
  3. Toast the Nuts and Seeds: Lightly toast slivered almonds and sesame seeds in a dry skillet over medium heat until golden and fragrant, then set aside.
  4. Whisk the Dressing: In a small bowl, combine soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger. Whisk until smooth and well blended.
  5. Assemble the Salad: In a large mixing bowl, toss shredded chicken, prepared vegetables, toasted nuts, and seeds. Pour dressing over and gently toss until evenly coated.
  6. Serve and Enjoy: Transfer salad to serving dish, garnish with extra cilantro or crunchy noodles, and serve fresh for the best taste and texture.

Notes

  • Double the dressing to keep on hand for salads or marinades.
  • Keep veggies and chicken chilled before mixing to maintain crispness.
  • Slice vegetables and chicken uniformly for balanced bites.
  • Use fresh cilantro and green onions for best aroma and flavor.
  • Make ahead by keeping dressing separate until ready to serve to avoid sogginess.
