Ingredients

Scale

Main Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup quinoa, rinsed
  • 1 teaspoon chipotle powder (adjust to taste)
  • 2 tablespoons olive oil, divided
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 6 soft corn or flour tortillas
  • Salt and pepper, to taste

Optional Garnishes and Variations

  • Avocado slices
  • Fresh jalapeños or hot sauce (for extra heat)
  • Vegan cheese
  • Black beans or grilled tofu
  • Toasted pepitas or sliced radishes
  • Diced red onions
  • Vegan sour cream

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Peel and dice the sweet potatoes into small cubes, toss them in 1 tablespoon of olive oil, chipotle powder, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
  2. Cook the Quinoa: While the sweet potatoes roast, rinse 1 cup of quinoa under cold water. In a saucepan, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes until fluffy and all water is absorbed. Fluff with a fork and set aside.
  3. Sauté Aromatics: Heat remaining 1 tablespoon of olive oil in a skillet over medium heat. Add finely diced onions and cook 3-5 minutes until translucent. Add minced garlic and cook an additional minute until fragrant.
  4. Combine Filling: Add cooked quinoa and roasted sweet potatoes to the skillet with onions and garlic. Stir to combine and warm through. Season with salt, pepper, fresh lime juice, and extra chipotle powder if desired.
  5. Assemble the Tacos: Warm tortillas in a dry pan or microwave. Spoon a generous amount of the sweet potato quinoa mixture onto each tortilla. Top with fresh cilantro, avocado slices, and any additional garnishes you like.

Notes

  • Cut sweet potatoes uniformly to ensure even roasting and caramelization.
  • Always rinse quinoa before cooking to remove its natural bitterness.
  • Warm tortillas just before serving to keep them soft and pliable.
  • Adjust chipotle powder gradually to control spice level.
  • Add lime juice right before serving to brighten flavors.
  • Store filling and tortillas separately to maintain freshness.
  • Reheat filling gently over low heat to preserve texture and moisture.
