Crust Ingredients
- 1 cup almond flour
- 1/2 cup all-purpose flour (or gluten-free flour blend for gluten-free option)
- 1/4 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, cold and cut into pieces
Filling Ingredients
- 7 oz dark chocolate (at least 60% cocoa), chopped
- 3/4 cup heavy cream
- 2 large eggs, at room temperature
- 1/2 tsp almond extract
Garnish
- Prepare the Almond Crust: In a bowl, mix together almond flour, all-purpose flour, and sugar. Cut in cold unsalted butter until the mixture resembles coarse crumbs. Press the mixture evenly into a tart pan to form the base crust. Chill in the refrigerator for at least 30 minutes to firm up before baking.
- Blind Bake the Crust: Preheat oven to 350°F (175°C). Line the chilled crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove weights and parchment paper. Continue baking for 10 more minutes until the crust turns golden brown. Let it cool completely.
- Make the Chocolate Filling: Heat heavy cream in a saucepan until just boiling. Pour the hot cream over chopped dark chocolate in a bowl. Let sit for 1 minute, then whisk until smooth and glossy. Stir in eggs and almond extract until fully combined.
- Assemble and Bake the Tart: Pour the chocolate filling into the cooled almond crust. Sprinkle sliced almonds generously over the top. Bake at 325°F (160°C) for 25–30 minutes until the filling is set but still slightly jiggly in the center. Allow the tart to cool completely to room temperature before serving.
Notes
- Chill the crust well before baking to prevent shrinking and maintain shape.
- Use high-quality dark chocolate (60% cocoa or higher) for the best flavor.
- Do not overbake the filling; it should remain slightly wobbly when you remove it from the oven.
- Lightly toast sliced almonds before garnishing to enhance crunch and aroma.
- Bring eggs and heavy cream to room temperature before mixing for smooth texture.
