Instructions

  1. Prepare the dry ingredients: Whisk together all-purpose flour, baking powder, granulated sugar, and salt in a large mixing bowl to ensure even distribution and a lighter texture.
  2. Cut in the cold butter: Add cold unsalted butter chunks. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces, key for flakiness.
  3. Add liquid ingredients and chocolate chips: Pour in heavy cream or buttermilk and vanilla extract, mixing gently until the dough just begins to come together. Fold in the chocolate chips evenly without overworking the dough.
  4. Shape the dough and cut the scones: On a lightly floured surface, pat the dough into a 1-inch thick circle. Cut into 8 equal wedges using a sharp knife or bench scraper, then place on a parchment-lined baking sheet.
