Ingredients

Scale

Base Ingredients

  • 2 cups crushed gingerbread cookies (use homemade or your favorite brand)
  • 4 oz cream cheese, softened
  • 2 tbsp molasses
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon

Chocolate Coating

  • 8 oz high-quality dark chocolate (at least 60% cocoa), for melting

Optional Garnishes

  • Pinch of sea salt
  • Crushed candy canes
  • Powdered sugar for dusting
  • Finely chopped pecans or walnuts (for nutty variation)
  • Cayenne or ground cloves (for spice kick)

Instructions

  1. Prepare the Gingerbread Base: Crush gingerbread cookies into fine crumbs using a food processor or by sealing them in a bag and rolling with a pin to achieve a smooth texture.
  2. Mix with Cream Cheese and Molasses: In a bowl, combine gingerbread crumbs, softened cream cheese, molasses, ground ginger, and cinnamon. Stir until a smooth, firm dough forms that is easy to shape.
  3. Shape the Truffles: Using a spoon or cookie scoop, portion the mixture and roll into uniform balls by hand. Place them on a parchment-lined tray and chill in the refrigerator for about 30 minutes to firm up.
  4. Melt the Chocolate: Gently melt dark chocolate in a heatproof bowl over a double boiler or in short microwave bursts, stirring frequently. Let cool slightly while keeping it smooth and fluid.
  5. Coat the Truffles: Dip each chilled truffle fully into the melted chocolate using a fork or dipping tool. Place coated truffles back on parchment paper. Optionally, sprinkle with sea salt before the chocolate sets.
  6. Let Them Set: Refrigerate the coated truffles for at least one hour until the chocolate hardens completely before serving or packaging.

Notes

  • Chill the truffle mixture well before shaping to make rolling and coating easier.
  • Use high-quality chocolate for a richer, smoother coating.
  • Handle truffles carefully when dipping to avoid uneven coating.
  • Melt chocolate in small batches to keep it fluid and workable.
  • Adjust cinnamon and ginger amounts to customize spice level.
