Chocolate Eclair Cake

Chocolate Eclair Cake

Chocolate Eclair Cake is an elegant, no-bake dessert combining creamy vanilla pudding, soft yet crunchy graham crackers, and rich chocolate frosting. Easy to prepare and perfect for any occasion, this layered treat is customizable and improves in flavor after chilling.

Ingredients

Scale

Base and Layers

  • 2 packages graham crackers (approx. 12 oz)

Pudding Mixture

  • 2 (3.4 oz) packages instant vanilla pudding mix
  • 4 cups cold milk
  • 1 (8 oz) tub whipped topping, thawed

Topping

  • 1 (16 oz) container of chocolate frosting

Instructions

  1. Prepare the Pudding Mixture: Whisk the instant vanilla pudding mix with 4 cups of cold milk until it thickens. Gently fold in the whipped topping until the mixture is smooth and creamy.
  2. Layer the Grahams and Pudding: In a 9×13 inch dish, lay graham crackers side by side to completely cover the bottom. Spread half of the pudding mixture evenly over the graham crackers.
  3. Add Another Layer of Crackers and Pudding: Place a second layer of graham crackers over the pudding, then spread the remaining pudding mixture evenly on top.
  4. Top with Chocolate Frosting: Spread a generous and even layer of chocolate frosting over the pudding to finish the top of the cake.
  5. Chill and Serve: Refrigerate the cake for at least 4 hours or overnight. This allows the graham crackers to soften and the flavors to meld perfectly before serving.

Notes

  • Use cold milk to ensure the pudding thickens properly and sets quickly.
  • Choose a smooth and creamy chocolate frosting for the best texture and flavor.
  • Chilling overnight enhances the texture and taste of the cake.
  • Keep graham crackers flat and intact while layering for neat presentation.
  • For clean slices, run a sharp knife under hot water, dry it, and then cut the cake.
