Christmas Tree Deviled Eggs with Avocado Filling

Christmas Tree Deviled Eggs with Avocado Filling

Christmas Tree Deviled Eggs with Avocado Filling are a festive and creamy appetizer perfect for holiday gatherings. This recipe replaces traditional mayo with ripe avocado for a silky smooth, nutrient-packed filling shaped like Christmas trees and decorated with cherry tomatoes and fresh herbs to add color and holiday cheer.

Ingredients

Scale

Eggs

  • 6 large eggs, hard-boiled

Avocado Filling

  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt, to taste
  • Black pepper, to taste

Decorations

  • Cherry tomatoes or pimentos, small pieces for ornaments
  • Fresh herbs (parsley or chives), finely chopped

Instructions

  1. Boil and Prepare Eggs: Place large eggs in a pot and cover with cold water. Bring to a boil, then remove from heat and let sit covered for 10-12 minutes. Drain and cool the eggs in ice water, then peel carefully to avoid cracking the whites.
  2. Prepare the Avocado Filling: Cut the ripe avocado in half and remove the pit. Scoop out the flesh into a bowl and gently mash it. Add lemon juice, Dijon mustard, salt, and pepper, stirring until the mixture is creamy and smooth.
  3. Halve and Scoop Eggs: Slice each hard-boiled egg lengthwise. Carefully scoop out the yolks and add them to the avocado mixture. Blend them together until well combined and fluffy.
  4. Fill the Egg Whites: Using a spoon or piping bag, fill each egg white half with the avocado and yolk mixture. Shape the filling into a pointed top, resembling the branches of a Christmas tree.
  5. Decorate Your Christmas Tree Deviled Eggs: Use small pieces of cherry tomatoes or pimentos as Christmas tree ornaments and sprinkle finely chopped herbs to represent pine needles. Get creative to make each egg festive and fun.

Notes

  • Use fresh eggs to make peeling easier and avoid messy whites.
  • Prep eggs and avocado filling a day ahead to save time on busy days.
  • Avoid over-mashing the avocado filling to maintain texture variation.
  • Use a piping bag to achieve neat, pointed “tree” shapes.
  • Cover filling tightly with plastic wrap pressed directly on it to prevent browning.
