  • 1 large egg (or flaxseed egg replacement for vegan option)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional spices: 1/4 teaspoon cumin, 1/4 teaspoon paprika
  • 2 tablespoons olive oil or vegetable oil for frying

Instructions

  1. Prepare the spinach and corn: Thoroughly wash the spinach, then blanch it quickly in boiling water to soften. Squeeze out all excess moisture using a clean towel. Remove kernels from fresh corn cob or drain frozen/canned corn well.
  2. Mix the batter: In a large bowl, combine chopped onions, minced garlic, spinach, and corn. Add flour, beaten egg, salt, pepper, and any optional spices you like. Stir until a thick batter forms that holds together but isn’t too runny.
  3. Heat the pan and fry: Heat 1-2 tablespoons of oil in a non-stick skillet over medium heat. Drop spoonfuls of batter into the pan, flattening slightly with the back of the spoon. Fry each side for 3-4 minutes until golden brown and crisp.
  4. Drain and serve: Remove fritters from the pan and place on paper towels to absorb excess oil. Serve warm with your favorite sauce or dip.

Notes

  • Make sure to squeeze out as much water as possible from spinach to avoid soggy fritters.
  • Batter should be thick but scoopable; add more flour if too wet or a splash of milk if too dry.
  • Medium heat is ideal to get crispy outsides without burning.
  • Fry fritters in batches to prevent overcrowding and maintain crispness.
  • Let batter rest for 10 minutes before cooking to meld flavors and improve texture.
