  • 2 tablespoons olive oil, divided

  • Salt and pepper, to taste

Instructions

  1. Prepare the Peppers: Wash and halve the bell peppers, removing all seeds and membranes. Lightly brush the outsides with olive oil and roast in a preheated oven at 375°F (190°C) for about 10 minutes to soften slightly while keeping their shape.
  2. Make the Creamy Pizza Filling: In a skillet, heat 1 tablespoon olive oil over medium heat. Sauté the garlic and onion until fragrant and translucent. Add your choice of pepperoni or vegetables, cooking briefly. Stir in the tomato sauce and Italian seasoning, then lower the heat. Mix in the cream cheese until melted and smooth. Fold in most of the shredded mozzarella cheese, reserving some for topping.
  3. Stuff the Peppers: Generously fill each roasted pepper half with the creamy pizza mixture, pressing down to pack well. Sprinkle the reserved shredded mozzarella cheese on top for extra meltiness.
  4. Bake to Perfection: Place the stuffed peppers on a baking tray and bake in the oven at 375°F (190°C) for 15-20 minutes, or until the cheese on top is bubbling and lightly golden.

  • Don’t overfill the peppers; leave a little gap at the top to prevent spilling during baking.
  • Use fresh, firm, and glossy bell peppers for the best texture and taste.
  • If using fresh tomatoes or additional veggies, sauté to remove excess moisture to avoid soggy peppers.
  • Customize your cheese blend by mixing shredded mozzarella with parmesan for added flavor.
  • Allow peppers to rest for 5 minutes after baking to let the filling set slightly before serving.
