Instructions

  1. Prepare the Spinach: Rinse the fresh spinach thoroughly. Heat olive oil or butter in a pan over medium heat and sauté the garlic and chopped onion until fragrant and slightly translucent. Add the spinach and cook until wilted, then squeeze out any excess moisture to avoid a watery casserole.
  2. Mix the Filling: In a large bowl, combine the sautéed spinach mixture with cottage cheese, beaten eggs, salt, pepper, and half of the shredded cheese. Stir well to evenly blend all ingredients.
  3. Assemble the Casserole: Lightly grease a baking dish and pour in the spinach and cheese mixture, spreading it evenly. Sprinkle the remaining shredded cheese over the top, then add bread crumbs or parmesan if using, to create a golden and crispy crust.
  4. Bake Until Golden: Preheat oven to 350°F (175°C). Place the casserole in the oven and bake for 30 to 35 minutes, or until the top is bubbly and lightly browned. Let the casserole rest for a few minutes before serving so it can set.
