Ingredients

Scale

Main Ingredients

  • Fresh tomatoes or canned whole tomatoes – about 4 cups (chopped or whole with juices)
  • 1 medium onion, finely chopped
  • 23 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves or 1 teaspoon dried herbs (basil, thyme, oregano)

Instructions

  1. Sauté the aromatics: Heat olive oil or butter in a large pot over medium heat. Add the finely chopped onions and cook for about 5 minutes until translucent and soft. Add minced garlic and cook for another minute until fragrant but not browned.
  2. Add tomatoes and broth: Pour in fresh chopped tomatoes or canned whole tomatoes with their juices. Stir well, then add the vegetable or chicken broth. Bring to a gentle boil, reduce heat, and simmer for 15 minutes to meld the flavors.
  3. Blend until smooth: Use an immersion blender to puree the soup directly in the pot until silky smooth. Alternatively, transfer the soup in batches to a regular blender and then return it to the pot.
  4. Stir in cream and season: Slowly pour in the heavy cream or coconut milk while stirring to prevent curdling. Season with salt, pepper, and fresh or dried basil to taste. Warm the soup through for 2 to 3 minutes, making sure it does not boil.
  5. Serve hot: Ladle the creamy tomato soup into bowls and garnish as desired with fresh basil leaves, a drizzle of olive oil, a swirl of cream, or cracked black pepper. Enjoy immediately.

Notes

  • Use ripe tomatoes for the richest flavor.
  • Simmering the soup deepens the tomato taste.
  • Blend thoroughly for a luxurious, ultra-smooth texture.
  • Add cream slowly while stirring to keep the soup silky.
  • Adjust seasoning after blending to get salt and pepper just right.
