Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Cook the chicken breasts until golden brown and cooked through, approximately 6-7 minutes per side. Remove from the skillet and set aside to rest.
  2. Cook the Pasta: While the chicken is cooking, bring a large pot of salted water to a boil. Add your choice of fettuccine or penne pasta and cook according to package instructions until al dente. Drain the pasta, reserving about half a cup of pasta water, and set aside.
  3. Make the Sauce: In the same skillet used for the chicken, add minced garlic, chopped sun-dried tomatoes, and a pinch of Italian seasoning to the remaining oil and chicken juices. Sauté until fragrant. Pour in the heavy cream and simmer gently, allowing the sauce to thicken slightly. Stir in the freshly grated Parmesan cheese until melted and smooth.
  4. Combine and Add Veggies: Slice the cooked chicken and return it to the skillet. Add fresh spinach and the cooked pasta. Toss everything together, adding reserved pasta water as needed to loosen the sauce and achieve a perfect coating.
  5. Serve Warm: Heat through and taste to adjust seasoning with salt and pepper if necessary. Serve immediately for the best flavor and creamy texture.
