  • 2 cloves garlic, minced

Sauce & Seasonings

  • 1 cup heavy cream or coconut milk
  • 1/3 cup grated Parmesan cheese or nutritional yeast
  • 2 tablespoons olive oil
  • 2 tablespoons fresh herbs (basil, parsley, or thyme), chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Wash and chop all the vegetables into bite-sized pieces. Mince the garlic and finely dice the onion to ensure even cooking and optimal flavor release.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to package directions until al dente. Drain the pasta, reserving one cup of pasta water for later use in adjusting the sauce consistency.
  3. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until fragrant and translucent. Add the chopped vegetables and sauté until they are tender yet still vibrant in color.
  4. Make the Creamy Sauce: Pour heavy cream or coconut milk into the skillet with the vegetables. Stir gently and allow the mixture to simmer to thicken slightly. Add grated Parmesan or nutritional yeast, and season with salt and pepper to taste. If the sauce is too thick, loosen it by stirring in reserved pasta water gradually.
  5. Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss well to coat the pasta evenly with the creamy vegetable sauce. Finally, sprinkle the chopped fresh herbs over the pasta and mix lightly to incorporate.
