Instructions

  1. Prepare the mushrooms: Gently clean the mushrooms with a damp cloth to remove any dirt and trim the stems if needed to keep the bites uniform. Pat them dry thoroughly to ensure the coating sticks and does not become soggy.
  2. Make the garlic breadcrumb mixture: In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, freshly minced garlic, salt, pepper, and any optional herbs. Mix well to distribute flavors evenly.
  3. Set up the coating stations: In a separate bowl, beat the eggs until smooth. This will act as the glue to help the breadcrumb mixture adhere to the mushrooms.
  4. Coat the mushrooms: Dip each mushroom first into the beaten egg mixture, allowing excess to drip off. Then, roll it thoroughly in the garlic breadcrumb mixture until fully coated. Place the coated mushrooms on a plate ready for cooking.
  5. Cook to crispy perfection: Heat olive oil or butter in a skillet over medium heat. Add the coated mushrooms in batches to avoid overcrowding, cooking each side for about 3-4 minutes, or until deep golden and crispy. Alternatively, bake the coated mushrooms on a parchment-lined baking sheet at 400°F (200°C) for 15-20 minutes, flipping halfway through.
