Crock Pot Mediterranean Chicken with Feta and Spinach

A simple and healthy Crock Pot Mediterranean Chicken with Feta and Spinach recipe combining tender chicken, fresh spinach, tangy feta cheese, and aromatic Mediterranean herbs for a flavorful, set-it-and-forget-it slow cooker meal that’s perfect for busy nights.

Ingredients

Scale

Protein

  • 1.5 to 2 pounds boneless chicken thighs or breasts

Vegetables

  • 5 cups fresh spinach, roughly chopped if large leaves
  • 1 pint cherry tomatoes, halved
  • 1 medium onion, sliced
  • 3 garlic cloves, minced

Dairy

  • 4 ounces crumbled feta cheese

Herbs & Seasonings

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste

Others

  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice (added before serving)

Instructions

  1. Prepare the Ingredients: Rinse and pat dry the chicken. Halve the cherry tomatoes, mince the garlic cloves, slice the onion, and roughly chop the fresh spinach if the leaves are large. This preps everything for easy layering in the slow cooker.
  2. Assemble in the Slow Cooker: Drizzle olive oil into the slow cooker, then add sliced onions and minced garlic. Place the chicken pieces on top, followed by the halved cherry tomatoes, dried oregano, and dried basil. Season generously with salt and pepper to bring out all the flavors during cooking.
  3. Cook Low and Slow: Cover and cook on low for 4 to 6 hours until the chicken is tender and fully cooked through. This slow cooking process allows the tomatoes to break down and the herbs to infuse the dish deeply.
  4. Add Spinach and Feta: About 15 minutes before serving, stir in the fresh spinach and crumbled feta cheese. The residual heat will soften the spinach perfectly while the feta adds a creamy, tangy finish.
  5. Finish with Fresh Lemon: Just before serving, squeeze fresh lemon juice over the dish to add a bright, citrusy contrast that enhances the Mediterranean flavors even more.

Notes

  • Use bone-in chicken thighs for added flavor; note they need longer cooking time.
  • Do not overload the slow cooker to ensure even cooking and proper flavor melding.
  • Layer garlic and onions at the bottom for best aroma infusion.
  • Add spinach last to maintain its bright green color and fresh texture.
  • Whenever possible, substitute dried herbs with fresh basil and oregano for a more vibrant flavor.
