Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts, sliced thin

Vegetables

  • 3 cups yellow or red potatoes, cut into bite-sized cubes
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Sauces & Oils

  • 1/2 cup BBQ sauce (your favorite brand or homemade)
  • 2 tablespoons olive oil

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare Your Ingredients: Wash and cut the potatoes into bite-sized cubes, dice the onion, and mince the garlic. Slice the chicken breasts into thin strips to ensure even cooking and faster pan time.
  2. Brown the Potatoes: Heat olive oil in a large skillet over medium heat. Add the potato cubes and cook, stirring occasionally, until golden brown and just tender, about 10 minutes. Remove from skillet and set aside.
  3. Cook the Chicken and Aromatics: In the same skillet, add a little more olive oil if needed and toss in the chicken strips. Season with salt and pepper, then cook until no longer pink, approximately 5-6 minutes. Add the diced onions and minced garlic, sautéing until fragrant and translucent.
  4. Combine and Simmer with BBQ Sauce: Return the potatoes to the skillet with the chicken. Pour the BBQ sauce over the mixture and stir gently to coat everything evenly. Reduce heat to low and cook for an additional 5 minutes, allowing the sauce to thicken and flavors to meld.
  5. Garnish and Serve: Sprinkle fresh parsley on top if desired and serve hot straight from the skillet for a cozy, satisfying meal.

Notes

  • Pre-cook potatoes by parboiling for a few minutes if you prefer a softer interior with a crispy exterior.
  • Use a non-stick skillet to prevent sticking and promote even browning of both potatoes and chicken.
  • Do not overcrowd the pan; cook ingredients in batches if needed to ensure proper searing and texture.
  • Choose a thick, flavorful BBQ sauce for better coating and richer taste.
  • Let the skillet rest off the heat for a couple of minutes after cooking to enhance flavor development.
