Ingredients

Scale

Protein

  • 1 lb boneless chicken breasts, cut into bite-sized pieces

Carbohydrates

  • 1 package (about 16 oz) potato gnocchi (fresh preferred)

Liquids

  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 12 tbsp olive oil or butter (for sautéing)

Vegetables & Aromatics

  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups fresh baby spinach

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp dried thyme or 1 tbsp Italian seasoning

Instructions

  1. Step 1: Sauté Aromatics – Heat olive oil or butter in a large pot over medium heat. Add diced onions, minced garlic, chopped carrots, and celery. Cook until vegetables are soft and fragrant, about 5 minutes. This creates the flavor base for your soup.
  2. Step 2: Cook the Chicken – Add bite-sized pieces of boneless chicken breast to the pot. Season with salt, pepper, and dried herbs. Cook until the chicken is mostly cooked through and begins to brown slightly, around 5-7 minutes.
  3. Step 3: Add Broth and Simmer – Pour in the chicken broth and stir well. Bring the mixture to a gentle boil, then reduce heat to low and let it simmer for 10 minutes. This allows flavors to meld and finishes cooking the chicken.
  4. Step 4: Cook the Gnocchi – Add the potato gnocchi directly into the simmering soup. Cook until the gnocchi float to the surface, about 3-5 minutes. This will add a soft, chewy texture to the soup.
  5. Step 5: Stir in Cream and Spinach – Lower the heat, then slowly stir in the heavy cream or half-and-half to create a silky, creamy broth. Add fresh baby spinach and cook just until wilted. Taste and adjust salt and pepper as needed before serving.

Notes

  • Use fresh gnocchi for optimal texture and faster cooking.
  • Do not overcook gnocchi to prevent them from becoming mushy.
  • For a more uniform chicken texture, shred the chicken instead of cubing it before returning it to the soup.
  • Simmer gently after adding cream to avoid curdling.
  • If soup gets too thick, thin it out with extra broth or water.
