Perfect for gifting or a sweet treat, this simple recipe requires minimal ingredients and is ready in under 20 minutes, offering a delightful balance of flavors and textures.

Ingredients

Scale

Main Ingredients

  • 1 cup good-quality semi-sweet or dark chocolate chips or chopped chocolate bars
  • 1 cup roasted peanuts (unsalted or lightly salted)

Optional Ingredients

  • 1 tablespoon coconut oil (to add smoothness and glossy finish)
  • A small sprinkle of sea salt (to enhance richness and balance sweetness)

Instructions

  1. Prepare Your Workspace: Line a baking sheet with parchment paper or wax paper to prevent sticking and for easy cleanup. This also helps the clusters set evenly.
  2. Melt the Chocolate: Gently melt the chocolate chips or chopped bars using a double boiler or microwave in short bursts, stirring frequently to avoid burning. If using, stir in coconut oil at this stage for a silky texture and shiny finish.
  3. Combine Peanuts and Chocolate: Once the chocolate is smooth and melted, fold in the roasted peanuts thoroughly until they’re well coated but not drowning in chocolate.
  4. Form the Clusters: Using a spoon, drop small mounds of the chocolate-peanut mixture onto your lined baking sheet. Space them a little apart to prevent sticking together as they harden.
  5. Chill and Set: Place the baking sheet in the fridge or a cool spot for about 15–20 minutes until the chocolate is completely firm and set.

Notes

  • Use good-quality chocolate as it greatly affects flavor.
  • Don’t overcoat peanuts; keep them visible for crunch.
  • Melt chocolate slowly on low heat to avoid graininess or burning.
  • Store clusters between layers of parchment paper to prevent sticking.
  • Mix chopped peanuts with whole ones for added texture contrast.
