Instructions

  1. Prep Your Ingredients: Slice the pork thinly against the grain for tenderness. Beat the eggs lightly. Mince garlic, ginger, chop green onions, and prepare any optional vegetables. Boil the lo mein noodles according to package instructions, drain well, and set aside.
  2. Cook the Pork: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced pork and stir-fry until golden brown and cooked through, about 4 to 5 minutes. Remove from pan and set aside.
  3. Scramble the Eggs: In the same skillet, pour in the beaten eggs. Let cook undisturbed for a few seconds, then gently scramble into soft curds. Once cooked, remove or push to the side of the pan.
  4. Sauté Aromatics and Vegetables: Add more oil if needed. Stir in garlic and ginger, cooking until fragrant, about 30 seconds. Add the optional vegetables and cook until tender-crisp, approximately 2 to 3 minutes.
