Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste

Onions & Aromatics

  • 3 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon fresh or dried thyme

Liquids & Broth

  • 1 ½ cups beef broth (good quality or homemade)

Toppings

  • 4 slices sourdough bread or 1 cup croutons
  • 1 ½ cups Gruyere or Swiss cheese, shredded

Seasoning

  • Salt and freshly ground black pepper, to taste

Instructions

  1. Caramelize the Onions: Slice the onions thinly. In a large pan over medium heat, melt the butter and add the sliced onions. Cook slowly, stirring frequently, until the onions become golden-brown and soft, carefully coaxing out their natural sweetness without burning. Add the minced garlic and thyme during the last few minutes of cooking to enhance flavor.
  2. Prepare the Chicken: Season the chicken breasts generously with salt and pepper. Heat a separate pan over high heat and sear the chicken breasts briefly on both sides until they develop a slight golden crust, locking in juices and adding texture.
  3. Assemble the Bake: Place the seared chicken breasts into a baking dish. Evenly pour the beef broth and caramelized onion mixture over the chicken. Layer the sourdough bread slices or croutons on top, and generously sprinkle shredded Gruyere or Swiss cheese to cover the surface.
  4. Bake to Perfection: Preheat the oven to 375°F (190°C). Bake the assembled dish for about 15 minutes or until the chicken is fully cooked through (internal temperature of 165°F) and the cheese is melted, bubbly, and lightly browned. Watch carefully to prevent burning.

Notes

  • Take your time caramelizing the onions to develop rich flavor; rushed onions won’t be as flavorful.
  • Use a food thermometer to ensure chicken reaches 165°F internally for safety and tenderness.
  • Gruyere cheese melts beautifully and gives an authentic French onion flavor; Swiss cheese is a great substitute.
  • Use a high-quality beef broth or homemade for deeper savory notes.
  • Let the bake rest for a few minutes after baking to allow juices to settle and maintain moisture.
