Ingredients

Scale

Mushrooms

  • 12 large fresh mushrooms (white or cremini)

Vegetables and Aromatics

  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced

Fats and Broth

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/4 cup beef or vegetable broth

Cheeses

  • 1/2 cup Gruyère cheese, shredded (divided)
  • 1/4 cup Parmesan cheese, grated (divided)

Herbs

  • 2 teaspoons fresh thyme or chopped parsley

Instructions

  1. Prepare the Mushrooms: Carefully clean the mushrooms with a damp cloth to remove any dirt. Remove the stems and gently scoop out the insides to create space for the filling. Finely chop the mushroom stems and set aside.
  2. Caramelize the Onions: Heat butter and olive oil in a skillet over medium-low heat. Add the sliced yellow onions and cook slowly, stirring occasionally, until the onions turn golden brown and develop a deep, sweet flavor, about 30 minutes.
  3. Combine the Filling: Add the minced garlic and chopped mushroom stems to the caramelized onions and cook for a few more minutes. Deglaze the pan with broth to keep the mixture moist and savory. Remove from heat and stir in half of the Gruyère and Parmesan cheeses along with fresh thyme or parsley.
  4. Stuff the Mushrooms: Preheat the oven to 375°F (190°C). Spoon the filling generously into each mushroom cap, pressing lightly to compact the mixture.
  5. Bake and Cheese: Place the stuffed mushrooms on a baking sheet and sprinkle the remaining Gruyère and Parmesan cheeses on top. Bake for 20-25 minutes until the mushrooms are tender and the cheese is melted, bubbly, and golden brown.

Notes

  • Use fresh mushrooms for the best texture and flavor absorption.
  • Take your time caramelizing the onions slowly to develop rich sweetness.
  • Do not overstuff mushrooms to allow cheese to melt perfectly on top.
  • If using large, thick mushrooms, pre-bake caps for 5-7 minutes before stuffing to soften.
  • Combine Gruyère and Parmesan cheeses for a complex, savory flavor.
