  • 1/4 cup chopped green onions or chives
  • 1 tablespoon fresh lime juice

Instructions

  1. Prepare the Corn: Cook fresh corn kernels by boiling or grilling until tender or thaw frozen corn if using. Let the corn cool completely to keep the salad crisp.
  2. Mix the Dressing: In a bowl, whisk together mayonnaise, sour cream or Greek yogurt, fresh lime juice, salt, and pepper until smooth and creamy.
  3. Combine the Ingredients: Add the cooled corn, diced red bell pepper, chopped green onions or chives, and shredded cheddar cheese to the dressing. Gently fold everything together to evenly coat.
  4. Add the Fritos: Just before serving, carefully fold in the Fritos to preserve their crunch and prevent them from getting soggy.
  5. Chill and Serve: Refrigerate the salad for at least 30 minutes to allow flavors to meld. Serve chilled for the best flavor and texture experience.
